This turkey chili mac recipe by Food Wishes on YouTube is a good way to use leftover Thanksgiving turkey. My family and I usually save the turkey’s bone to make a soup broth the next day, and it’s a great way to not waste food. This recipe is a great way to make a whole different meal that makes leftovers not boring. I know some people get overwhelmed or bored with eating leftovers for days straight, but there are many ways to repurpose them into something greater.

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 teaspoon salt, or more to taste
  • 2 tablespoons chili powder, or to taste
  • 1/2 teaspoon ground dried chipotle pepper or more to taste
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon unsweetened cocoa powder
  • 1 pinch ground cinnamon
  • 1/2 teaspoon dried oregano
  • 3 cloves garlic, minced
  • 4 cups chicken broth, or more as needed
  • 1 (10-ounce) can diced tomatoes with green chile peppers
  • 1 cup tomato sauce
  • 1 pound coarsely chopped leftover turkey
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1 cup elbow macaroni
  • 1/2 cup grated white Cheddar cheese

Directions:

First, heat olive oil in a pot over medium-high heat. Add the onions and salt, and cook until it turns translucent. While the onions are cooking, make the spice mixture by combining chili powder, chipotle pepper, cumin, black pepper, cocoa, cinnamon, and oregano in a small bowl, or dump each spice while cooking. Next, once the broth simmers, add the beans and elbow macaroni and cover tightly with a lid. Let that cook until the pasta is barely tender. Remove off the heat and let it sit for 5 minutes before serving.

In conclusion, you can add sour cream, grated cheese, or onions on top and garnish with greens. This would be a great soup or chili recipe after Thanksgiving, because it’s usually cold, which will keep me warm inside.
