
This recipe for a triple lemon poke cake by Catherines Plates is the perfect cake for any summer day. The sweet cake flavors mixed with a tart lemon create the most delicious balance. It is also one of the easiest poke cake recipes I’ve found, you’ll be surprised how quickly you can make it.
Ingredients Needed For This Recipe:
- Boxed Lemon Cake Mix
- Milk
- Eggs
- Butter
- Lemon Jello
- Water
- Lemon Pudding Mix
- Cool-Whip
- Lemon
Directions:
Step One
In a large bowl. mix up your boxed cake mix, eggs, milk and butter. Make sure to melt the butter before adding it to the recipe. Once all of this is mixed, pour it into a cake pan and then bake it. Just follow the box instructions for baking.

Step Two
Use a large straw to poke holes into the cake you just made. Poke lots of holes. The more you can create the better.
Step Three
Mix up one packet of lemon jello with a cup of hot boiling water and half a cup of cold water. Mix the jello up with a whisk.
Step Four
Pour the jello you just mixed into the cake. Place the cake into the refrigerator for at least 3-hours
Step Five
Mix up lemon pudding mix in a bowl with cold milk and mix it together until you have a thick pudding consistency. Finally, mix in some cool-whip into the pudding. Use a spatula to fold the cool-whip into the pudding.

Step Six
Take your cake out of the refrigerator and spread the pudding mixture across the top of the cake. Slice up a lemon and use it to garnish the cake.
