The dressing is very simple but pairs perfectly with the salad. It’s just a mix of olive oil, red wine vinegar, dried oregano, salt, and pepper. Serve this salad with burgers, chicken, grilled fish, or roasted meat.

Easy Three Bean Salad Ingredients

  • ½ red onion
  • ¾ cup of cucumber (diced)
  • ½ cup of parsley (chopped)
  • one 15-oz can of chickpeas
  • one 15 oz can of kidney beans
  • one 15 oz can of cannellini beans
  • ¼ cup of olive oil
  • ¼ cup of red wine vinegar
  • ½ teaspoon of dried oregano
  • ½ teaspoon of salt
  • ¼ teaspoon of pepper

How to Make Three Bean Salad

Step 1:

Cut half an onion into thin slices vertically, then cut in half. Cut off the top and disregard. Place the sliced onions in a bowl.

Step 2:

In the same bowl, add the cucumber, parsley, chickpeas, kidney beans, and cannellini beans. Mix to combine. Set aside.

Step 3:

Make the dressing. In a measuring cup, add ¼ cup of olive oil, ¼ cup of red wine vinegar, ½ teaspoon of dried oregano, ½ teaspoon of salt, and ¼ teaspoon of pepper. Whisk until well combined.
