How to Make Crispy Beer Battered Fried Fish
Step 1:
Make the sauce the day before to allow the flavors to come together. Just add all the ingredients in a bowl and mix well. Place in the fridge until ready to use.
Step 2:
Place your cod fish on a wire rack and salt on all sides. Set aside and let it sit for 10 to 15 minutes.
Step 3:
Add oil to your fryer and heat it up to 375F.
Step 4:
Make the batter. Whisk flour, baking soda, salt, and rice flour in a bowl. Slowly pour one ice cold beer to avoid getting too many bubbles. Whisk until just combined. Do not overmix. A few lumps are just fine.
Prepare a different bowl with flour.
Step 5:
Once the oil is at 375F, take the fish and dab it with a paper towel to remove excess moisture. Coat it with the flour, shake off any excess flour, then dip into the batter. Shake the excess batter, then slowly drop it into the oil away from you. Cook for about 7 minutes until golden brown. Internal temperature should be 145F. Use a spoon or fork to move it around.
Place it on a wire rack and season with salt. Let the excess oil drip off.
Step 6:
Serve with french fries and homemade sauce. Enjoy!
