Fill a small pot with water and place it over heat. Let it come to a simmer. While waiting for it to simmer, make an ice bath. Fill a bowl with water and add some ice cubes.
Once simmering, take a tomato and cut a shallow X on the bottom using a serrated knife. It will help peel the tomato. Gently lower the tomato to the simmering water. Heat for 15 seconds. You want the skin to pull away from the flesh. Do not cook it for too long.
After 15 seconds, remove using a slotted spoon and put in the ice bath. Get the tomato back to room temperature.
Remove from the ice bath and peel the skin using your hands.
