Ingredients for John Wayne Casserole:
- 16 ounces of large biscuits, refrigerated
- 1 tbsp of olive oil
- 2 pounds of ground beef
- 1 packet of taco, seasoning
- ¼ -½ cup of water
- 1 (10 oz) can of diced tomatoes with green chilies
- 14 ounces of canned corn, drained
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 (4 oz) can of canned jalapenos, sliced
- 1 cup of mayonnaise
- 1 cup of sour cream
- 1 cup of cheddar cheese, shredded
- 1 cup of mozzarella cheese, shredded
- Fresh parsley chopped, for garnish
How to Make John Wayne Casserole:
Step 1
Preheat your oven to 350°F, then lightly grease a 9×13-inch baking dish, and arrange the biscuits in a single layer as shown in the video. Place it in the preheated oven, then let the biscuits bake for about 10 to 12 minutes, and while waiting, cook the meat.
Step 2
Place a large skillet on a stove over medium heat, then heat the olive oil, and saute the sliced onion and red bell pepper until softened. Add the ground beef, then break it apart and cook it until nice and brown, and drain off any excess grease.
Step 3
Add the taco seasoning and water, then mix them until thoroughly combined, add the diced tomatoes and drained corn, and cook them for about 5 minutes while occasionally mixing. Spread the beef mixture evenly over the biscuit layer, then spread the sliced jalapenos, and set it aside.
Step 4
In a separate bowl, add the mayonnaise and sour cream, then give them a good mix, and spread it evenly over the jalapenos. Sprinkle the shredded cheddar cheese and mozzarella cheese on top until completely covered.
Step 5
Place the casserole in the preheated oven, and let it bake for about 30 to 35 minutes or until the cheese is bubbly and golden. Once done baking, let it cool down for a few minutes, then garnish it with chopped parsley, and serve warm. Enjoy!
