I recently found this Texas tornado cake video recipe tutorial by A Family Feast, on YouTube, and it sounded so delicious, I had to make it. This cake is so unusual because it is made with canned peaches and canned pears in the actual cake batter, which makes it kind of like a fruit cake, but not the dense candied kind. This cake is more light and fluffy than a regular fruit cake, so it is more like a fruit salad poke cake taste. The caramelized coconut icing for this cake is is a lot like the topping on a delicious German chocolate cake, in that it has a creamy texture that never hardens up in a rigid way.

  • 1 1/2 cups of granulated sugar
  • 2 eggs
  • 2 cups of all-purpose flour
  • 2 cups of canned fruit (peaches, pears, or you could use fruit cocktail or pineapple)
  • 2 teaspoons of baking soda
  • 1 teaspoon of vanilla (optional)
  • 1/4 cup packed brown sugar
  • 1 cup of chopped nuts

For The Coconut Icing:

  • 8 tablespoons (1 stick of butter)
  • 1 cup sweetened coconut
  • 3/4 cup packed brown sugar
  • 1/2 cup canned evaporated milk
  • Chopped nuts (pecans are best)
