To start, cook your rice according to the package instructions. Next, combine 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/4 tsp cayenne pepper, 1/2 tsp onion powder, 1/2 tsp salt, and freshly ground black pepper to taste. Mix well and set aside. After this, prepare the veggies. Dice your yellow onion, cube your red bell pepper, and halve your cherry tomatoes. Spray some cooking oil into your pan over medium heat. Once heated, add the chopped onion and red bell pepper. Saute for about three to four minutes until softened. After four minutes, push them to the edge of the pan, respray some oil, and add the ground beef. Switch the heat to medium-high at this point.

After about a minute, add the spices mixture and give everything a mix. After this, add the halved cherry tomatoes and five to six pieces of pickled jalapenos (optional). Mix well, switch the heat down to medium, add a splash of water, and put the lid on. Let everything simmer for two minutes. After two minutes, add the laughing cow cheese and incorporate it into the sauce. Finally, add the cooked rice and mix everything well to combine.
