Breakfast is my favorite meal of the day, and I always make sure that I prepare a delicious and filling dish before I work. One of my go-to recipes is this Tex-Mex style sausage egg and bacon casserole by Rachel cooks with love ❤. It is packed with all of my breakfast favorites.

Although this casserole mostly contains breakfast ingredients, you can make it at any time of the day. You can even prepare it the night before, place it in the refrigerator, then bake it in the morning. If you have a busy week ahead, this is the perfect dish. Easy Sausage Egg Bacon Breakfast Casserole Ingredients

  • french loaf bread (tear into small pieces)
  • 8 eggs
  • 1 1/2 cups of whole milk
  • 1/2 cup of half and half
  • 1/2 small diced onion
  • 1/4 cup of diced red bell pepper
  • 1/4 cup of diced green bell pepper
  • 1 diced jalapeno with seeds (optional)
  • 2 1/2 cup of grated Colby jack cheese
  • 9 bacon strips (cut into bite-sized pieces)
  • 3/4 lb of Jimmy Dean sausage
  • 2 teaspoons of Dijon mustard
  • 1 teaspoon of pepper
  • salt

How to Make Tex-Mex Style Breakfast Casserole

Step 1:

Start by cooking the bacon in a skillet until crispy, then place on a plate lined with paper towel. Once done, remove the bacon grease.

Step 2:

In the same skillet, add the sausage and cook until browned for about 5 minutes.

Step 3:

While waiting for the sausage to brown, spray some cooking spray in a casserole dish and add the pieces of bread. Set aside.

Step 4:

Once the sausage is browned, add the onions, jalapeno, green peppers, and red peppers. Cook until the onions are translucent. Add the garlic and cook for a few seconds. Turn off the heat.

Step 5:

Add the sausage over the bread pieces, then sprinkle some of the bacon on top (reserve for the toppings).

Step 6:

Beat the eggs in a bowl, then add the milk, half and half, Dijon mustard, some of the cheese, pepper, and salt. Mix them all together, then carefully pour into the casserole dish. Push them down a little bit. Sprinkle more cheese on top and the reserved bacon pieces. Cover with cling wrap and refrigerate for 30 minutes.

Step 7:

Remove the cling wrap then cover with aluminum foil. Place in a 350F preheated oven and bake for 40 minutes. Remove the foil, then put back inside the oven. Bake for 15 minutes more.

Step 8:

Once done baking, let it sit for 15 minutes before cutting. Enjoy!
