Ingredients:

  • 1 tbsp oil
  • 1.1 lb ground beef
  • 1/4 tsp salt
  • 1/2 tsp ground black pepper
  • 1 onion, peeled and diced
  • 1 red bell pepper, deseeded and finely diced
  • 1 yellow bell pepper, deseeded and finely diced
  • 3 cloves of minced garlic
  • 3 tbsp Fajita seasoning mix
  • 1 tsp smoked paprika
  • 1 beef stock cube, crumbled
  • 2 tbsp hot pepper sauce
  • 2 tbsp tomato puree
  • 14 oz jar of passata
  • 14 oz tin of black beans, drained
  • 1 tbsp light brown sugar
  • 1/2 cup water
  • 1/2 packed cup grated mixed cheese

Directions:

Step 1

Heat 1 tbsp oil in a large pan over medium heat. Add the ground beef, 1/4 tsp salt, and 1/2 tsp ground black pepper. Cook for five minutes until meat is browned. Next, add the diced onion, diced red and yellow onion, and minced garlic. Mix together and cook for about five minutes. Season with 3 tbsp Fajita seasoning mix, 1 tsp smoked paprika, 2 tbsp hot pepper sauce, 2 tbsp tomato puree, and 1 crumbled beef cube. Mix all together until well combined.

Step 2

Next, add a 14 oz jar of passata, 1/2 cup water, 14 oz tin of drained black beans, and 1 tbsp light brown sugar. Mix and bring it to a gentle simmer for about ten minutes, stirring occasionally. After ten minutes, give it a final stir, then add 1/2 packed cup of grated mixed cheese. Cover the pan and cook it for a final two minutes until the cheese fully melts. Serve with some avocados, chopped jalapeno, and sliced tomatoes. Enjoy!
