What’s your favorite food in the morning? Mine is this tasty egg breakfast sandwich recipe by Toasted. If you’re tired of plain sunny-side-up or scrambled eggs, be sure to try this. It has cheese, tomato slices, parsley, and tomato sauce. It’s the perfect snack on a lazy or busy day as it’s easy to make and won’t even take more than 10 minutes to prepare. Ingredients:
- 3 eggs
- 2 tablespoons of chopped onion
- 2 tablespoons of chopped parsley
- salt to taste
- chili flakes to taste
- 1 teaspoon and 1 tablespoon of butter
- tomato sauce
- cubed mozzarella cheese
- tomato slices
- black pepper
- 4 slices of bread

Instructions:
Step 1:
Crack 3 eggs in a bowl. Add 2 tablespoons of chopped onion, 2 tablespoons of chopped parsley, salt, and chili flakes. You can adjust the amount of chili flakes depending on your preference. Beat until well combined using a fork or whisk.
Step 2:
Heat a large skillet or pan. Melt 1 teaspoon of butter, then place the two slices of bread. Once browned and toasted, flip and toast the other side. Remove them from the pan.
Step 3:
Melt 1 tablespoon of butter, then pour the egg mixture. Immediately add 2 slices of toasted bread. Cook until the egg is set. Flip the two slices of bread with a big spatula. Fold the egg on the sides toward the center.
Step 4:
Spread some tomato sauce, then sprinkle mozzarella cheese on top. Lastly, add two to three tomato slices to each piece of bread, then season with black pepper.
Step 5:
Place the remaining slices of bread on top and press them gently with your spatula. Toast until the mozzarella cheese melts.
Step 6:
Remove from the pan and place on your cutting board. Slice it in half diagonally, then serve while warm. Enjoy!
