  • 2 tbsp. oil
  • 1 lb. (454 g) ground beef
  • 1 beef bouillon cube (you can use salt or any seasoning)
  • 1 1/2 to 2 tbsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. ground cumin
  • 2 tbsp. (20 g) all-purpose flour
  • salt and pepper to taste
  • 1 1/4 cup (125 g) shredded cheddar cheese


Cornbread Mix

  • 1 cup (130 g) yellow cornmeal
  • 1/2 cup (65 g) all-purpose flour
  • 1 tbsp. (15 g) baking powder
  • 2 tbsp. (25 g) sugar
  • 1/2 tsp. salt
  • 1 large egg
  • 1 tbsp. (15 ml) oil
  • 14.75 oz. (418 g) can of creamed corn
  • 1/2 cup (118 ml) milk
  • 1 to 2 large jalapeno (diced)
  • 1/2 cup (50 g) shredded cheddar cheese



Step 1

In a preheated pan with 2 tbsp. oil, add ground beef. Next, add the bouillon beef cube (you can also use salt or any seasoning you like), 1/2 tsp. ground cumin, 1 tsp. onion powder, 1 tsp. garlic powder, and 1 1/2 tbsp. of chili powder. Sprinkle a bit of black ground pepper to taste. Mix it all and continue sauteing the ground beef. When the ground beef started to get brown, add 2 tbsp. of all-purpose flour. To thicken the consistency, add 1 cup of water and let it simmer for about 5 minutes. Turn off the heat after 5 minutes, set it aside, and let it cool for about 10 minutes.

Step 2

In a bowl, add 1 cup of yellow cornmeal, 1/2 cup of all-purpose flour, 1 tbsp. of baking powder, 2 tbsp. of sugar, and 1/2 tsp. of salt; mix it all. After this, add 1 large egg into the mixture followed by 1 tbsp. of oil (you can also use melted butter), 1 can of creamed corn, and 1/2 cup of milk. Mix it all nicely. You can also add 1/2 cup of shredded cheddar cheese and 1/4 cup of fresh diced jalapeno to make it a jalapeno cheddar cornbread.

Step 3

Grease the baking dish with butter, then start assembling the casserole. First, add half of the cornbread mixture, spreading it at the bottom nicely. Next, add all the ground beef and 1 1/4 cup of shredded cheese. Lastly, add the rest of the cornbread mix, spreading it nicely on top. In a preheated oven of 400 degrees F, bake the casserole uncovered for about 22 – 25 minutes. Let it sit for about 10 minutes before serving.
