Start by cutting your steak with the grain into three 2.5″ wide strips. After that, turn each strip 90 degrees and slice thinly. They should be approximately 1″x1/8″x2″. Place meat in a colander, rinse well, and place in a bowl.
Add soy sauce, cooking wine, sesame oil, sugar, cornstarch, and baking soda to the meat. Mix until well-coated.
Place a wok or large cast iron over high heat to preheat to at least 550F.
Add oil to the wok, then half of the marinated meat. Stir often for about 60 to 90 seconds or until browned and cooked about 80%-90% through. Transfer to a bowl. Repeat with the remaining marinated beef.
Turn the heat to high. Add a splash of water and hold a wet towel with tongs to remove any stuck beef gunk on the pan.
Add a squirt of oil followed by half of the broccolini and half of the onions. Sautee for 60 to 90 seconds or until charred around the edges and tender. Transfer to a bowl with cooked beef.
Turn the heat to high, add a squeeze of oil, and the remaining broccolini and onions. Cook for 60 to 90 seconds, then add garlic and ginger. Stir then add the cooked beef and veggies. Toss for about 15 to 20 seconds. Add stirfry sauce around the inside edges of the wok. Next, add 2 to 3 spoons of cornstarch mixture then toss everything to combine. Serve with rice.
