What can be better than tacos? Taco soup just might be even better than a traditional taco and it really can feed a lot of people and the instructions are super easy. You make this taco soup just like you are making regular tacos, the only difference is that you add beef stock to the taco meat and cook it on the stovetop. I found this taco soup recipe on YouTube by McCormick Spice, that is the people who make my favorite taco seasoning so I knew the taco soup recipe was going to be good. For the garnishes, which are my favorite part, I got some fresh avocado, some cilantro, cheddar cheese, and some of my favorite tortilla chips from El Galindo, but Fritos would also work well and be very tasty.

Ingredients:

  • 1 pound of ground beef
  • 1 onion (chopped)
  • 2 packets of McCormicks Taco Seasoning
  • 1 green bell pepper (chopped)
  • 1 can of black beans (you can use kidney or pinto beans as well)
  • Tomatoes
  • 2 to 3 cups Beef Stock
  • Corn (fresh or frozen)
  • Avocado (for garnish)
  • Cilantro (for garnish)
  • Tortilla chips (for garnish)
  • Cheddar cheese (for garnish)

Directions:

Then you will add your beef stock to the mixture and then your corn, if corn is in season, by all means, use fresh corn. When the taco soup is done just garnish and serve, it’s that easy.
