This yummy recipe by Chop Secrets on YouTube is the perfect fusion of sweet and salty! After watching the video, I immediately ran to my kitchen to check if I have all the ingredients I need, went to the grocery, and instantly made an attempt for my own sweet corn cheddar pie. I did not regret trying out this recipe because it turned out to taste really good, and I might make it again this week!

Ingredients:

  • 2 tbsp of butter
  • 1 cup of yellow onion, finely chopped
  • 1 clove of garlic, minced
  • 4 cups of corn kernels
  • 2/3 cups of milk
  • 2 cups of cheddar cheese
  • ¾ cup of panko bread crumbs
  • 1 tsp of Kosher salt
  • ¾ tsp of ground pepper
  • 3 tbsp of chopped fresh chives, optional
  • 3 eggs
  • Paprika

Directions:

Step 1

Preheat your oven to 375°F, then spray your baking pan or dish with a non-stick cooking spray, and set it aside. Place a medium-sized skillet on a stove over medium-high heat, then add the butter, and let it melt before adding the chopped onions. Let them cook for about 4 minutes or until it turns slightly brown at the edges. Lower your heat to medium before adding the garlic, then let it cook for about 2 t o3 minutes or until the garlic is fragrant but not browned. In a medium-sized mixing bowl, mix the corn with the onion and garlic mixture.

Step 2

Then, pour the milk, and add half a cup of cheese, half a cup of panko bread crumbs, salt, pepper, and chives. Give them a good stir until well combined, then add in the eggs, and mix them together again. Pour and transfer the mixture to the sprayed baking pan, then top it with cheese, panko bread crumbs, green onions, and a pinch of salt, pepper, and paprika. Pop it in the preheated oven and let it bake for about 35 minutes or until the top is slightly browned. Let it cool for about 5 to 10 minutes before serving, then garnish it with a dash of paprika and more chives, if desired.
