This super easy slow cooker teriyaki chicken recipe by The Magical Slow Cooker will be your go-to lunch or dinner meal. It’s loaded with amazing flavors, and the chicken is tender and moist. Notes: If you don’t have mirin (rice wine) or can’t get one, you can use unfiltered dake, dry sherry, or sweet marsala wine as a substitute
In a medium-sized bowl, add the soy sauce, mirin, rice wine vinegar, brown sugar, cornstarch, ginger, garlic, and sesame seeds. Mix until well combined.
Place the chicken breast onto the bottom of the slow cooker in a single layer, then pour over the soy sauce mixture.
Put the settings on high and cook for 3 hours. You can also cook it on low for about 5 to 6 hours or until the chicken is tender and shreddable. After cooking, the sauce should be thick.
Once done cooking, remove the chicken from the slow cooker and place it in a medium-sized bowl. Shred into large pieces using two forks. After that, put it back into the sauce and stir well.
Scoop freshly cooked rice and place in a bowl or plate, top it with the chicken teriyaki, then garnish with toasted sesame seeds and sliced scallions. Serve and enjoy!
