With this method by Preppy Kitchen, you can make the best meringue cookies at home! It’s super easy to make – you just need to be a little patient. These crisp, light, and airy treats only require 5 ingredients. I am sure you’ll enjoy making these as much as I did.

Ingredients:

  • 4 egg whites
  • 1 cup of sugar
  • 1 pinch of salt
  • 1 teaspoon of vanilla
  • 1/4 teaspoon of cream of tartar

Instructions:

Step 1:

Preheat the oven to 200F.

Step 2:

Separate the egg whites one at a time into a small bowl, then put each into the bowl of your stand mixer. This way, you can make sure that there aren’t any broken yolks in your bowl.

Step 3:

Add the cream of tartar and salt to the bowl. Mix on low setting, then gradually increase the speed to high.

Step 4:

Once egg whites have frothed up, slowly sprinkle the sugar. Remember to take your time and do it gradually, as this will make a big difference in your final meringue. You can add a teaspoon at a time or sprinkle as slowly as you can. After that, beat in some vanilla.

Step 5:

It’s done when your meringue has a thick marshmallow texture and can hold a nice peak. If you want to add color, just put a small amount of coloring in with a toothpick or skewer then beat in with the whisk attachment. Transfer it to a piping bag fitted with a large star attachment or with the tip snipped off.

Step 6:

Add small dollops of meringue to the corners of your baking sheet and press the parchment paper down. Pipe your meringues. Make sure they are at least an inch between. Squeeze the piping bag about 1/2 inch away from the paper – lift as you squeeze then stop squeezing and continue to lift.

Step 7:

Place the baking sheet on the center rack and bake at 200F for about an hour, then turn off the oven. Keep it closed for 1 or 2 hours more. The meringues should be dried throughout after that.
