A southern dish will never be complete without a cornbread muffin on the side, and this version by Preppy Kitchen is the best I have ever tried. It has the perfect texture and sweetness and goes well with any meal. You don’t need to spend a lot of time in the kitchen for this recipe, as it can be done in less than 30 minutes. Preheat your oven to 400F, then lightly grease a 12-cup muffin pan with cooking spray or softened butter.
Add 1 1/4 cups of yellow cornmeal, 1 cup of all-purpose flour, 2 teaspoons of baking powder, 1/3 cup of granulated sugar, and 3/4 teaspoon of kosher salt in a large bowl. Whisk until combined. Set it aside.
Get a medium bowl, and add 3/4 cup of whole milk, 1/2 cup of melted butter, beaten egg, and 3 tablespoons of honey. Whisk all ingredients until well combined. Create a well in the center, then pour the milk mixture. Mix until just combined.
Evenly divide the batter in the prepared muffin pan. It should be about 1/4 cup per well.
Place inside the preheated oven and bake for 15 to 18 minutes or until a toothpick comes out clean when inserted into the center.
Once done baking, remove the muffins from the oven. Take them out from the tray and place them in a cooling rack to slightly cool. Serve these muffins warm with honey butter or any pairing you like. Enjoy!
