This super easy corn casserole recipe by Rachel cooks with love ❤ is the perfect side dish for any gathering or celebration! It’s made with creamed corn,  kernel corn, egg, sour cream, and Jiffy mix. Ingredients:

  • 1 stick of unsalted butter (melted)
  • 1 can (14.5 oz) creamed corn (you can use regular kernel corn, just put it in the blender)
  • 1 can (15.25 oz) whole kernel sweet corn (drained)
  • 1 large egg
  • 1 cup of sour cream (use yogurt or mayonnaise as a substitute)
  • 1/4 cup of chopped green onions (white and green parts)
  • 1/2 teaspoon of sugar
  • pepper as needed (optional)
  • 1 (8.5 oz) box Jiffy corn muffin mix
  • non-stick spray (use butter as a substitute)

For garnish:

  • chopped green onions (as needed)
  • freshly grated cheese (any cheese you prefer)

Instructions:

Step 1:

Preheat the oven to 350 degrees Fahrenheit.

Step 2:

In a large mixing bowl, combine 1 stick of melted unsalted butter, 1 can of creamed corn, 1 can of whole kernel sweet corn, 1 beaten egg, 1 cup of sour cream, 1/4 cup of chopped green onions, 1/2 teaspoon of sugar and pepper. Mix everything until well combined.

Step 3:

Add 1 box of Jiffy corn muffin mix into the mixture and mix until well incorporated.

Step 4:

Grease your 8 by 8 baking dish with non-stick spray or butter. Transfer the mixture to your baking dish.

Step 5:

Place in the preheated oven and bake for 45 minutes. Take it 12 minutes before the time is finished and top it with more green onions and cheese. Place back in the oven and continue baking. Once done, remove it and let it cool down for about 6 to 7 minutes. Slice then serve. Enjoy!
