Preheat your oven to 400F.
Get a 9-inch pie pan and line it with a pie crust. Fold the edges if desired, then line the top with parchment paper and fill with pie weights. Place it inside the oven and bake for 20 minutes.
After 20 minutes, remove the parchment paper and weights. Continue baking until the edges and bottom are golden for about 10 to 15 minutes. Set it aside and let it cool completely.
Mix sugar and cocoa powder in a medium saucepan with a whisk. Next, slowly whisk in 1 1/2 cups of milk until well combined. Bring it to a simmer over medium-high heat while stirring frequently. Reduce the heat to medium-low.
Get a large heat-proof mixing bowl and add 1/2 cup of milk, egg yolks, flour, and salt. Mix until well combined. When the milk comes to a simmer, slowly whisk into the egg mixture, then pour it back into the saucepan.
Cook over medium-low heat while continuously stirring for about 5 minutes. Remove it from the heat once thickened and bubbling. Mix in the butter and vanilla.
Pour the pudding into the baked pie shell. Place it in the refrigerator uncovered for at least 4 hours or overnight. Serve it with whipped cream if desired.
