Place a large pot over medium-high heat and pour 2 tablespoons of olive oil. Once hot, add the diced onions, carrots and celery. Mix then let them cook for about 4 to 5 minutes.
Add the minced garlic, dried basil, dried oregano and salt into the pot and stir for 1 minute.
Add the chopped cabbage into the pot. Let it cook for about 5 minutes while stirring frequently, so all of the pieces are soft.
Add 1 can of diced tomatoes pour 4 cups of vegetable broth (depending how thick or brothy you want your soup to be) into the pot. Let it simmer uncovered for about 10 minutes or until the vegetables are cooked to your liking.
Take off the cabbage soup from the heat. Season with lemon juice, parsley and cracked bell pepper. Give it a good mix then it’s ready to serve.
