The filling has the most amazing taste and texture – it’s all that I am looking for in a pie. Preheat your oven to 400 Fahrenheit.
Place the pie crust in a 9-inch pie pan and crimp it as desired. Next, line it with parchment paper and fill it with pie weights. Place inside the preheated oven and bake for 20 minutes. Once done, remove parchment paper and weights and continue to bake for about 10 to 15 minutes until golden and dry.
Get a medium saucepan. Add sugar and cocoa powder, then whisk. Slowly whisk in 1 1/2 cups of milk until well-mixed. Place the pan over medium-high heat and let it simmer while stirring frequently. Turn the heat to medium-low.
Get a large heat-proof mixing bowl, and add the remaining 1/2 cup of milk, egg yolks, flour, and salt. Mix until well combined. Once it comes to a simmer, slowly mix the hot milk into the egg mixture, then transfer it back into the saucepan.
Turn the heat to medium-low and cook for about 5 minutes until thickened and bubbling. Make sure to stir constantly. Remove it from the heat and add the butter and vanilla. Mix until melted and well combined.
Pour the mixture into the baked pie shell. Place it in the fridge uncovered for at least 4 hours or overnight before slicing. Serve it with whipped cream and chocolate shavings on top, if preferred. Enjoy!
