Lightly flour your work surface, then unroll and stack 1 box of Pillsbury refrigerated pie crusts. Roll it to a 17 x 12 inch rectangle.
Place the crust into a 15 x 10 x 1 inch baking pan and press it firmly into the corners and sides. Poke the bottom and sides of the crust with a fork.
Place it inside the oven and bake at 450F for about 9 to 11 minutes. Once done baking, remove from the oven and place on a wire rack to cool for 15 minutes.
Add 28 oz of sweetened condensed milk in a bowl, followed by 6 egg yolks, and 3/4 cup of key lime juice. Whisk until well combined.
Pour the mixture into the baked pie shell and spread it evenly with a spatula. Place it inside the oven and bake at 350F for about 10 to 12 minutes or until the filling is set. Once done, cool on a wire rack for 15 minutes, then refrigerate until chilled.
Add 2 cups of heavy cream to a bowl and beat until thickened. Next, add 3 tablespoons of sugar and beat until soft peaks. Spread over chilled pie, then sprinkle 1 tablespoon of lime peel on top.
