Stack the biscuits and cut them into four.
Spray your dish with non-stick spray and put the biscuits in one layer. Set it aside.
Heat a large pan, and add the bacon. Cook the bacon until crispy. Remove the bacon grease and just leave 2 tablespoons of it. Next, add the breakfast sausage and break it into pieces. Cook until brown. Add the chopped onions and cook until softened.
Reserve 1/4 of the sausage mixture for later. Add the all-purpose flour and mix until toasty. Add the milk, pepper, nutmeg, and seasoned salt. Stir it around and wait until it comes up to a low steady boil. Once boiling, lower the temperature down and let it simmer while stirring often until it thickens.
Make the egg mixture. In a bowl, add the eggs, milk, and a pinch of salt. Beat well using a whisk. Set aside.
Get the biscuits and top them with the reserved sausage mixture. Sprinkle 1 cup of fresh Colby cheese and pour the egg mixture. Next, add the sausage gravy and spread it. Top the casserole with leftover cheese.
Place in the center rack of a preheated oven at 350 degrees Fahrenheit for 30 to 45 minutes. Once done baking, let it cool down for a few minutes before serving. Enjoy!
