In a bowl or ziplock bag, add 1 cup of buttermilk and 2 teaspoons of salt. Submerge the chicken in the mixture and let it sit for about 6 hours in the fridge.
Combine all the coating ingredients in a large bowl. You can add cayenne pepper or chipotle powder. Keep in mind that the spices will turn way down once it’s fried. Set aside.
In a small bowl, add one part mayo, one part sour cream, one part red wine vinegar, and pepper. Mix until well combined. In a large bowl, add the shredded cabbage, carrots, and the dressing. Mix until all are coated.
Get a piece of your chicken and let the buttermilk drip into the coating mixture to add texture. Place the chicken and coat it well.
Add a generous amount of oil to your pan and heat it. Once the temperature reaches 350F, add your coated chicken and cook for about 4 minutes. It should have an internal temperature of 165F.
Slice the bun into half and fry them until slightly golden brown. Spread spicy mayo on both buns. One on the buns, add the thinly sliced picked, chicken and the slaw. Top it with the other bun and it’s ready to serve. Enjoy!
