I love putting pineapples on every dessert I make, especially on pastries. That’s why when I saw this sunshine pineapple cake from Southern Country Living on Youtube, I instantly fell in love with it. It’s packed with pineapples that I love so much; it just tastes divine! I mean, who wouldn’t love this? Aside from its heavenly taste, it is also super easy to make, and I bet all the ingredients are in your pantry already. Ingredients:

  • 1 box yellow cake mix
  • 4 eggs
  • 1/2 cup oil
  • 1 can (8 0z) crushed pineapple (with juice)

Frosting:

  • 1 container (8 oz) whipped topping, thawed
  • 1 small box of instant vanilla pudding
  • 1 can (8 oz) crushed pineapple (with juice)
  • few drops of yellow food coloring (optional)

Ingredients:

Step 1

Add one box of yellow cake mix in a large mixing bowl, followed by four large eggs, 1/2 cup of oil, and one can (8 oz) of crushed pineapple with juice. Whisk everything with a handheld mixer until well combined. After this, grease your baking pan with cooking spray, then transfer the cake batter. Spread the batter evenly, then bake it at 350 degrees F for 25 to 30 minutes.

Step 2

Now, make the frosting. In another mixing bowl, add one container (8 oz) of cool whip, a few drops of yellow food coloring (optional), one small box of instant vanilla pudding, and one can (8 oz) of crushed pineapple with its juice. Mix everything well to combine. Once done, spread it all over the top of the cooled cake. Sprinkle some more canned crushed pineapple or anything that you like. Serve and enjoy!
