Ingredients:

  • 3 medium potatoes, peeled
  • 1.1 lb lean ground beef
  • 1 small red bell pepper, chopped
  • 1 chopped onion
  • 3 cloves of chopped garlic
  • salt and pepper, to taste
  • 1 tbsp of oregano
  • 1 chopped tomato
  • 1/2 cup of peaches and cream corn
  • 3 beaten eggs
  • 2 tbsp of all-purpose flour
  • 1 cup of vegetable oil, for frying
  • parsley, for garnish

Directions:

Step 1

To start, boil your peeled potatoes until they are fork-tender. Meanwhile, cook your lean ground beef until browned, then add 1 chopped red bell pepper, 1 chopped onion, 3 cloves of chopped garlic, 1 chopped tomato, and 1/2 cup of peaches and cream corn. Season with salt and pepper to taste, and 1 tbsp of oregano. Mix and cook until they are fragrant. Back to the potatoes; once they’re fork-tender, drain them and season them with salt and pepper. After this, smash them with a potato masher.

Step 2

Once done mashing the potato, put two scoops into your palm, and shape them into a ball. Then, place it in a cling wrap, lay another layer of cling wrap on top, and flatten it out. After this, scoop up two tablespoons of the meat mixture, and place it in the center. Now, gather all the edges up, and shape it into a ball. Set it aside. Repeat these steps until you finish making your mashed potato into balls. Next, beat three eggs and add 2 tbsp of all-purpose flour. Mix until incorporated. After this, place the stuffed balls and coat them with the beaten eggs, then deep-fry them in 350 degrees F oil until they’re golden brown.
