This parmesan chicken recipe by Natasha’s Kitchen on Youtube is just the type of recipe I have been looking for. I invited my neighbor over for dinner, the night before last and I really wanted to make something special. I really did not have any time to plan for anything elaborate, but I had some chicken breasts. So I went searching on Youtube and found this stuffed chicken parmesan recipe that called for the basic ingredients that I already had on hand, and it looked absolutely delicious, so I decided to give it a go. I realized there were some easy modifications to this recipe as well, for instance, the fresh mozzarella cheese can be easily substituted for cheddar or gruyere cheese. I added some fresh chives and dried thyme and that worked beautifully and the one-pan chicken parmesan recipe tasted delicious. This recipe can be served with a side salad with a delicious homemade vinaigrette if you want. The chicken is so delicious, it will taste great over rice or potatoes as well.

Ingredients:

  • 4 medium chicken breasts
  • 1/3 cup all-purpose flour (or gluten-free flour)
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 large eggs (beaten)
  • 1/2 cup plain bread crumbs (or gluten-free cracker crumbs)
  • 1/3 cup finely grated parmesan cheese
  • 3 tablespoons extra light olive oil
  • 2 cups marinara sauce
  • 1/2 cups shredded mozzarella cheese (divided)
  • Fresh basil (to garnish)

Directions:

The instructions in this video tutorial are really easy to follow. You start by filling, then breading the chicken breasts with an egg wash and cracker crumbs.

Then you saute the chicken, then add all the other ingredients and bake at 400-degrees for 15 to 20 minutes and serve.
