Ingredients:

  • 6 large bell peppers (the size of your palm)
  • 1 yellow onion, diced
  • 2 cloves of garlic, minced
  • 1 lb of lean ground beef
  • 1 cup of cooked white rice
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp Italian mix seasoning
  • 1/4 cup of plain breadcrumbs
  • 1/4 cup of parmesan cheese
  • 1 large egg
  • 1 cup of marinara sauce (or pasta sauce)

Sauce for the bottom of the casserole:

  • 2 cups of marinara sauce (or pasta sauce)
  • 1/2 cup water

Topping:

  • 1/2 cup mozzarella cheese

Directions:

Step 1

Preheat your oven to 400 degrees F. Next, wash your bell peppers, cut off the tops (save the tops for later), then scrape and clean out the insides with a spoon. Set them aside. Now, prepare the filling. Dice one yellow onion, mince two garlic of cloves, then set them aside. Next, into a large bowl, add 1 lb of lean ground beef and 1 cup of cooked white rice. Season with 1 tsp of salt, 1/2 tsp of ground black pepper, and 1/2 tsp Italian seasoning. After this, add 1/4 cup of parmesan cheese, 1/4 cup of plain breadcrumbs, 1 beaten egg, 1 cup of marinara sauce, the diced onion, and minced garlic. Mix everything well to combine.

Step 2

Now, assemble the stuffed bell peppers. Add 2 cups of marinara sauce and 1/2 cup of water to the bottom of your casserole dish. Stir to combine. Next, stuff your prepared bell peppers with your meat filling, then place them in the casserole dish. After this, place the bell pepper tops in between to support them and keep them standing. Place them in the preheated oven and bake for 45 minutes. After 45 minutes, add some grated mozzarella cheese to each top, then bake for another 15 minutes. Serve and enjoy!
