This strawberry icebox cake dessert recipe by Food Fusion is sweet, creamy and delicious – the perfect treat this weekend. It’s loaded with strawberries, biscuits, and cream. I tried it at home today and I was so surprised at how easy it is to make. It turned out heavenly! Read on or watch the video below for full instructions.

Add strawberries, and caster sugar into a bowl. Mix well and let it rest for about 15 minutes.
In a different bowl, add strawberry jelly, and hot water. Stir until it thickens. Let it cool at room temperature and set aside.
Place ice cubes in a large bowl and place another bowl over it. Add the cream to the top bowl and beat it well. Next, add icing sugar and beat it until stiff peaks form.
Reserve 1/3 of whipped cream and transfer to a piping bag. Set it aside.
Add the prepared jelly to the remaining whipped cream. Beat them together until well combined and transfer them to a piping bag.
Get a baking dish. Add the strawberry cream to the bottom of the dish and spread. Next, layer the ladyfinger biscuits on top, followed by the reserved whipped cream. Spread evenly with a spoon. Add the sugar-coated strawberries for the next layer, followed by the strawberry cream and whipped cream. Spread evenly.
In a bowl, add strawberry jam and mash to remove lumps. Transfer it to a piping bag. Drizzle it on top of the whipped cream and make swirls using a skewer. Place in the refrigerator and let it chill.
Garnish it with strawberry slices then serve.
