Ingredients:
- 2 to 3 large ripe bananas (it will be around 1 cup when mashed)
- 1 to 3/4 cups of all-purpose flour
- 1/2 teaspoon of baking soda
- 2 teaspoons of baking powder
- 1/4 teaspoon of salt or a pinch
- 1/3 cup of softened butter
- 2/3 cup of granulated sugar
- 2 eggs (room temperature)
- 2 tablespoons of milk (room temperature)
- 1/2 cup of chopped walnuts for batter (plus 1/4 to 1/2 cup of walnuts for topping)
- 1 tablespoon of quick oats for topping (optional)

Instructions:
Step 1:
Preheat the oven to 350 degrees F.
Step 2:
Peel the bananas and mash them in a bowl. Set aside.
Step 3:
In a mixing bowl, combine 1 and 3/4 cups of all-purpose flour, 1/2 teaspoon of baking soda, 2 teaspoons of baking powder, and 1/4 teaspoon or a pinch of salt. Mix all dry ingredients with a fork. Set it aside.
Step 4:
In a different bowl, combine 1/3 cup of softened butter and 2/3 cup of granulated sugar. Mix for at least 2 minutes using a hand mixer. Start with low speed, then increase speed gradually. Add the mashed bananas, 2 large eggs, and 2 tablespoons of milk. Mix until well combined.
Step 5:
Mix the dry ingredients with the wet ingredients in batches, mixing after every addition. Make sure to not over-mix it. Add half a cup of walnuts to the mixture and mix.
Step 6:
Transfer the batter to a greased loaf pan and top with 1/2 cup of chopped walnuts. You can also add 1 tablespoon of quick oats if you prefer.
Step 7:
Bake in the oven for 55 to 60 minutes at 350 degrees F or until a skewer comes out clean when inserted in the middle. Once done, let it cool in the pan for 10 minutes, then remove it and place it on a rack.
