This squirrel and dumplings recipe by Phil Crockett on YouTube takes a classic comfort dish into an easy meal using canned biscuits. Squirrel and dumplings is a unique dish to make because usually chicken is used as protein. However, the squirrel in this recipe would be tender and you’ll get all of the same flavors from an original chicken and dumplings. This is an inexpensive dish to make with only 5 ingredients needed. The only “hard” part would be getting the squirrel, but it’s easy if you like to squirrel hunt. Although I am not a squirrel eater, I like the idea that Phil recreates his favorite dish with the meat that he hunts.

Ingredients:

  • 2 large squirrels, (cleaned, boiled, de-boned, shredded)
  • 4-6 cup chicken stock
  • 16 oz refrigerated biscuits
  • 2 carrots, chopped
  • 2 celery sticks, diced

Directions:

First, skin and clean the squirrels. Then, bring a pot with water or broth with the squirrels to a boil. Let it simmer for 4 hours. Next, once the broth is boiled with the shredded squirrel, reduce the heat and add the cut biscuits, carrots, and celery. Cover and let it simmer for 20 minutes.

Overall, this is a great way to serve squirrel when you get them in hunting season. It’s a nice variety instead of just eating fried squirrel, and you can make a whole meal with all of the food components. It’s interesting that some people are creative with food because I would’ve never thought about this idea. If I ate squirrel, I would definitely try this recipe out because it’s convenient and I love chicken and dumplings.
