These pastry pockets are crispy on the outside, and soft and creamy on the inside. You can never go wrong with the combination of cream cheese, feta cheese, spinach, and parsley. Making these treats is super easy, especially if you have a food processor on hand. They only take about 20 minutes to prepare and bake.

Easy Spinach Cheese Puff Pastry Pockets Ingredients
- 2 sheets of puff pastry
- 2.5 oz of fresh spinach
- 1 large handful of parsley
- 2 cloves of garlic
- 7 oz of cream cheese
- 11.1 oz of feta cheese
- salt and pepper
- 2 handfuls of almonds
- 1 lightly beaten egg
How to Make Spinach Cheese Puff Pastry
Step 1:
In a food processor, add spinach, parsley, and garlic. Process for a few minutes.
Step 2:
Add cream cheese, feta cheese, pepper, and salt. Process until well combined. Make a taste test and adjust the seasonings if needed.
Step 3:
Add the almonds and blend for a few seconds until the almonds are cut into chunks.
Step 4:
Preheat the convection oven to 350F.
Step 5:
Lay the pastry sheet flat and cut it into big squares.
Step 6:
Add a little bit of filling to each square. Take two corners of the puff pastry square and fold towards the center. Do the same for the two other corners. Press the center to hold it in place. Repeat with the remaining squares.
Step 7:
Place the pastry pockets on two baking sheets lined with parchment paper. Make sure to space them evenly. Lightly brush each one with the beaten egg.
Step 8:
Place in the preheated oven and bake for around 14 minutes. Once done baking, let them cool down for about 10 minutes before serving.
