Ingredients:

  • 2 sheets premade frozen puff pastry
  • ½ cup shredded Parmesan cheese
  • 1 egg
  • 2 tablespoons milk
  • 1 13.5-ounce can leaf spinach, drained
  • 8 ounces Neufchâtel cheese (or cream cheese)
  • ½ cup marinated artichokes, drained
  • 2 tablespoons sour cream

Directions:

Prepare all the needed ingredients and measure them out.

Preheat the oven to 400F.

Spray nonstick spray over the cupcake pan.

Let your 2 sheets of premade frozen puff pastry thaw enough that you can bend them without breaking them. Then, cut each sheet into 9 even squares.

Place and press each square sheet into one cup of the pan. In the end, you will have extra pieces of puff pastry. This recipe will make twelve servings.

In a bowl, prepare the egg wash by whisking together 1 egg and 2 tablespoons of milk.  Brush the egg wash onto the outer edges of each square puff pastry. Place your cupcake pan in the freezer to set while you make the filling.

Chop ½ cup of drained marinated artichokes into small pieces and set aside.

In a large mixing bowl, stir together 8 ounces of Neufchâtel cheese, 13.5 ounces of drained leaf spinach, and 2 tablespoons of sour cream. Once combined, add the chopped artichokes and sprinkle in some salt and pepper to taste.

Take the prepared puff pastry out of the freezer. Scoop the spinach mixture into the pastry cups, dividing it equally between all 12. Sprinkle some parmesan cheese on each pastry cup.

Place them in the oven to bake for 15-20 minutes, or until the edges of the pastry and the parmesan cheese turn a nice golden brown.

When done, let it cool for 5 minutes before removing it from the pan.
