Add minced garlic and ginger, cinnamon stick, nutmeg, coriander seeds, and red chili to a pan over low heat. Dry roast them for about 3 minutes. Once done, transfer them to a food processor and grind them into a fine powder. Set it aside for later.
Add 4 tablespoons of oil and a pinch of cumin to a pan over heat. Once hot, add the chopped onion and bay leaves. Saute until brown, then add chopped garlic, turmeric, and salt. Mix everything well.
Add the chicken and saute for about 2 minutes. Cover the pan and cook for 10 minutes on medium flame.
After 10 minutes, the chicken will produce oil. Mix the chicken, then add the spice powder you made earlier. Saute it for about 5 minutes on low flame. Keep stirring until the powder is well incorporated with the chicken.
Turn off the heat and add bay leaves. Serve on a plate. Enjoy!
