  • 4 slices of bacon
  • 2 tbsp of bacon grease
  • 1 cup of Vidalia onion, finely chopped
  • 1 tsp of butter
  • 2 tbsp of all-purpose flour
  • 15 ounces of diced tomatoes
  • 1 cup of chicken broth
  • 1 tbsp of tomato paste
  • ½ tsp of sugar
  • ¼ tsp of thyme, optional
  • ¼ cup of whole milk or heavy cream
  • Salt and pepper, to taste

Directions:

Step 1

Place a large skillet on a stove over medium-high heat, then add the bacon, and fry them until nice and crispy. Remove all of the cooked bacon from the skillet and set them aside leaving only about 2 tablespoons of the rendered bacon fat on the pan. In the same pan, add the diced onion and saute them until translucent, then add the butter and flour, and continue cooking them until the flour is absorbed and incorporated.
