Spoon bread’s texture is quite different from regular bread–it’s more like a pudding. It’s creamy, soft, and moist, which means you have to eat it with a spoon, hence the name. This recipe is super easy and quick to make. Plus, it only requires a few ingredients: cornmeal, boiling water, milk, salt, baking powder, eggs, and butter. In some versions of this recipe, the egg whites are separated from the yolks and whisked until fluffy. You can also try that technique to increase the volume, texture, and flavor.
Note: you can also use buttermilk instead of regular milk
Preheat your oven to 375F, then place your cast iron in the oven.
In a large mixing bowl, add 1 cup of cornmeal and 1 cup of boiling water. Whisk to combine. Let it cool for a few minutes.
Add 2 teaspoons of baking powder and 2 cups of milk. Whisk until well combined.
Mix in 3 eggs and 1 teaspoon of salt.
Lastly, add 2 tablespoons of melted butter. Whisk well.
Carefully remove the hot cast iron from the oven and grease it with butter. Pour the mixture into the skillet.
Place in the oven and bake at 375F for 35 minutes or until golden brown. Once done baking, serve it right away with a piece of butter. Enjoy!
