Peach cobblers are a staple in my house as we all love peaches, and it’s one of our favorite way to have them. So when I discovered this peach cobbler recipe from ThatGirlCanCook! on Youtube, I immediately tried it. I have no regrets; it’s easily one of the best peach cobblers I’ve tasted! Ingredients:

  • 2 cans (28 oz each) of yellow cling peaches in heavy syrup (1 can drain, 1 can with syrup)
  • 2 boxes of Pillsbury pie crust
  • 1/2 stick butter, melted
  • 1/2 cup brown sugar
  • 1 tbsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1 tbsp vanilla extract
  • 2 tbsp cornstarch
  • 2 tbsp water
  • pinch of salt
  • 1 tbsp lemon juice

Directions:

Step 1

In a large mixing bowl, add two cans of peaches in heavy syrup (one can drain, and one can with syrup), followed by 1 tbsp vanilla extract, 1 tbsp ground cinnamon, 1/2 tsp nutmeg, 1/2 stick of melted butter, 1 tbsp fresh lemon juice, and 1/2 cup light brown sugar. Set aside. Next, grab another bowl and combine 2 tbsp cornstarch, and 2 tbsp water. Mix well and add this to the peach mixture. Now, mix and combine all the ingredients well. Season with a pinch of salt, and continue to mix.

Step 2

Now, grease your baking dish with some melted butter, add two Pillsbury pie crusts to the bottom as well as the sides, then gently press them into your baking dish. Trim off excess pieces of the crust. Next, brush some melted butter on the crust, then poke holes into them using a fork. Bake it at 375 degrees F for eight to ten minutes. While waiting, cut another pie crust into strips for the top crust. After baking the crust, remove it from the oven and add the peach mixture. After this, lay the pie crust strips on top. Next, combine 1 tbsp brown sugar and some melted butter and mix. Brush this all over the top, then sprinkle some ground cinnamon. Bake at 375 degrees F oven for 40 to 50 minutes.
