Back in the day, my Grandmother would always cook bread pudding for me and my cousins! I remember how fantastic they smell once they’re out of the oven and growing up I would always try and make them whenever I crave them. This recipe by popatop912 on YouTube is pretty similar to how we made it at home and tastes absolutely incredible.
Step 1
Rub a cold butter onto your baking pan and make sure to grease the bottom as well as the sides, then set it aside. Slice the bread and dice the peaches, then set them aside as well. In a large mixing bowl, beat together 6 eggs, evaporated milk, condensed milk, vanilla extract, cinnamon, mace, and lemon, and whisk them all together until well combined and uniform. Now, add the crushed pineapples and melted butter, then continue whisking until combined. Pour the mixture into a large mixing bowl with the sliced bread in it, then flatten it with a wooden spoon while lightly pressing, and leave it to soak for about 5 minutes.

Step 2
While you’re waiting you can roast the nuts or have them roasted before you start preparing the mixture. Transfer the soaked bread into the greased pan, spread it evenly, and lightly press them down, top it with raisins and diced peaches, and then press the fruit down on the bread. Smoothen out the top so it’s flat and even, sprinkle the roasted nuts on top, and press them in as well. Sprinkle some more ground cinnamon for extra color, then bake it in a preheated oven at 350 degrees for about 40 to 60 minutes or until golden brown and cooked through.
