Put the ground chuck in your pan and turn the heat to medium. Add cracked black pepper and kosher salt, then mix. While the meat is browning, dice the white onion. Once done, put the onion in the pan and stir. Add the burger seasoning, mix then continue to cook.
Add the flour, stir and cook for 2-3 minutes. Next, turn the heat to medium-low, then add the milk. Mix then cook until it thickens. Once it’s thick, pour the cream of mushroom and stir. Now add the pinto beans, stir and let it simmer in medium-low heat for 5 minutes. Turn the heat off and set it aside.
Preheat the oven to 375 degrees F.
Peel the skin of the potatoes and slice them about a quarter of an inch. Put the potatoes in a pot of water, add some salt and let it boil for 5 minutes or until they are a little translucent on the edges and not wholly tender. Strain the water and run in cold water. Shake the water off as much as you can.
Spread some butter in your baking dish and layer some of the potatoes on the bottom. Sprinkle a thin layer of salt over the potatoes. Then pour over half of the beef mixture and spread it evenly. Next, sprinkle the cheese on top. Add another layer and do the same process.
Put inside the oven for 35 minutes. Once done, remove it from the oven and let it cool down for at least 15 minutes. Put a slice on a plate, add 1 spoon of sour cream and garnish with green onions, then serve. Enjoy!
