Ingredients:

  • 3 pcs. lemons
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • 1 cup chilled cream

Directions:

Step 1

To start, juice three lemons and transfer the liquid to a bowl. Add 1/2 cup of sugar and 3 tbsp cornstarch. Whisk until combined, then cook over low heat until thickened while whisking constantly. Once pasty texture, remove it from the heat and transfer it to a bowl. Cover with a cling wrap with it touching the surface of the paste, then cool it in the fridge.

Step 2

Next, in another bowl, add 1 cup of chilled cream and beat it with an electric mixer until a thick mass forms. After this, bring out the chilled lemon paste and whisk it as well. Now, combine the two and whisk until well combined. Transfer the cream to a piping bag once done. Serve and enjoy! You can also use this to fill or design pastries.
