What I love most about the holiday season, aside from meeting loved ones, is delicious food. This time of the year, I can’t help but taste all the cookies, candies, and treats everyone makes. They’re just too good to resist. One of my friends recently made soft ginger cookies and shared them with me. It was my first time having these cookies, and I was blown away by how delicious they were.

They are made with all your favorite spices–ginger, nutmeg, cloves, and cinnamon. The fresh ginger made a big difference in how these cookies turned out. Try making this recipe from Cooking with Shirani–I bet you will love it!

In a bowl, add shortening, white sugar, molasses, egg, and water. Mix for about a minute with an electric mixer.
Add the all-purpose flour, salt, baking soda, nutmeg, cloves, cinnamon, and fresh ginger. Whisk until thoroughly combined.
Cover the bowl with cling wrap, and place in the refrigerator for an hour to chill.
Preheat your oven to 400F, then line a baking sheet with parchment paper.
Using a 1-tablespoon cookie scoop, scoop the mixture and place it on the prepared sheet. Repeat with the remaining mixture. Make sure to space them apart. This recipe makes about 3 dozen cookies.
Place the baking sheet in the preheated oven and bake at 400F for 9 minutes.
Once done baking, remove from the oven and transfer the cookies in a cooling rack to cool.
To freeze for later consumption, just place them inside a ziplock bag and place them in the freezer. Pop them in the microwave for 10 seconds and serve. Enjoy!
