In a large bowl or the bowl of a stand mixer, add 5 cups of bread flour. Whisk the flour to get rid of any lumps. Next, add 1/3 cup of dry milk, 1 cup of sugar, 1 1/2 teaspoons of salt, 1 beaten egg, 1 tablespoon of oil, activated dry yeast, and evaporated milk.
If you are using the stand mixer, place the dough hook and knead it on low to medium speed for about 15 minutes with the butter (skip steps 3 to 5). If you don’t have one, mix all ingredients with a spatula until it forms into a dough.
Transfer it to a greased mat. Start folding the dough with the butter for about 5 minutes.
Put the dough back into the bowl, cover it with cling wrap and let it sit for 15 minutes.
Lightly flour your work surface and start kneading the dough for 15 to 20 minutes. Knead the dough until it can stretch thin without tearing.
Oil the dough in the bowl and cover it with the cling wrap. Let it sit in a warm place for 1 hour or until it doubles in size.
Transfer the dough to your clean surface. Press the air out and start folding. If the dough gets too tough to work with, cover it and let it rest for 5 minutes then work again.
Form into 12 equal dough balls. Place on a baking sheet lined with parchment paper. Cover with cling wrap and allow the dough to proof until it doubles in size in a warm place.
Brush some egg wash on top of the dough balls. Bake it in a preheated oven at 350 degrees F for 20 minutes. Once done baking, remove it from the pan and let it cool on a rack.
