Get a large bowl, and sift together the flour, baking powder, and salt in it. Whisk to combine then set aside.
In the bowl of a stand mixer with the paddle attachment, add the vegetable oil and granulated sugar and beat them together. Scrape down the mixture on the sides of the bowl and mix until well combined.
Add the cocoa powder into the bowl and mix it on low setting, scraping the bowl down halfway through. If you like the espresso powder, add it in at this point.
Add all the eggs one at a time while continuously mixing, followed by the vanilla.
Dump the flour mixture into the bowl carefully and mix on low. Scrape the bowl down and mix until combined.
Cover the bowl using a cling wrap and refrigerate overnight or for at least 4 hours.
Preheat the oven to 350 degrees F. Scoop out chilled dough using a small ice cream scoop or tablespoon and roll it into approximately one-inch balls with your clean palms.
Roll each dough ball in powdered sugar and place it on a baking sheet lined with parchment paper about 2 inches apart.
Bake them for about 10 to 12 minutes at 350 degrees F or until the edges are set. The center will finish baking once you remove them from the oven.
