Ingredients
- 1 1/2 cups of all-purpose flour
- 2 1/2 teaspoons of pumpkin pie spice
- 1 teaspoon of baking soda
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1 1/4 cups of pumpkin puree
- 1/2 cup of packed light brown sugar
- 1/2 cup of granulated sugar
- 1/2 cup of vegetable oil
- 1/4 cup of whole milk
- 2 large eggs
- 1 teaspoon of vanilla extract

Instructions
Step 1:
Start by preheating your oven to 425F and lining a muffin pan with cupcake liners.
Step 2:
Get a large bowl, and add flour, spices, baking powder, baking soda, and salt. Whisk all ingredients together until well combined.
Step 3:
Get a medium bowl, and add oil, milk, eggs, vanilla, and granulated and brown sugar. Whisk them together then add the pumpkin puree. Continue whisking until smooth.
Step 4:
Combine the dry ingredients with the wet ingredients. Mix until just combined.
Step 5:
Fill each of the paper liners with the batter about three-quarters full.
Step 6:
Place inside the preheated oven and bake for 5 minutes. After that, turn the oven temperature to 350F and bake for another 15 minutes. To check if it’s ready, insert a wooden pick in the center – it should come out clean. Remove muffins from the pan and place them on a wire rack to cool completely.
