What I love about this treat is the contrast between citrusy and sweet flavors. The sugar and butter balance the acidic taste of the lemon, making each bite refreshing and heavenly. Add 1/2 cup of softened butter, and 3/4 cup of sugar in a bowl. Mix until well combined.
Add an egg, 1 tablespoon of lemon zest, 2 tablespoons of lemon juice, and 2 to 4 drops of yellow food coloring(this is optional) to the butter-sugar mixture. Mix all the ingredients.
Sift 1 and 1/2 cups of flour, 1/2 teaspoon of baking powder, and 1/8 teaspoon of salt into the mixture. Stir until it becomes thick and smooth. Cover the bowl with a cling wrap and place it on the fridge for 1 hour.
Place the icing sugar in a bowl, then prepare a baking sheet lined with parchment paper. Get a tablespoon of the lemon mixture and roll it into a ball. Coat it with the icing sugar and place it on the prepared sheet. Repeat with the remaining mixture. Make sure that they are spaced well as they will expand when baked.
Place inside the oven and bake for about 12 minutes at 350F.
Once done baking, let it cool for a while. Serve and enjoy!
