Ingredients:

  • 4 russet potatoes
  • 4 chicken thighs and 4 chicken drumsticks
  • 1 cup mixed veggies
  • 1 small onion
  • ½ stick butter
  • 3 tsp all-purpose flour
  • ¼ cup chicken broth

Mashed potatoes

  • ¼ cup heavy cream
  • 2 tbsp unsalted butter

Seasoning

  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp paprika
  • 2 tsp salt
  • 2 tsp ground black pepper

Directions:

Step 1

After washing the potatoes and patting them dry with paper towels, start peeling off their skin, then cut them into cubes. Fill a pot with water, then place it on a stove over medium-high heat, and bring it to a rolling boil before adding the cubed potatoes and sprinkling a little bit of salt. Let it boil for about 10 to 15 minutes or until fork tender, then remove it from heat, drain off excess water, set aside for later, and let it cool down until needed. Add some oil to the chicken, then massage them well until nicely coated, and season them with a mixture of garlic powder, onion powder, paprika, salt, and black pepper. Rub the seasonings well on both sides of the chicken evenly. Place a pan on a stove over medium-high heat, then heat up some oil, and add the seasoned chicken. Let them sear on both sides until nice and brown, then place on a plate lined with a paper towel, and set aside.

Place a clean pan on the stove over medium-high heat, then heat up some oil, and add the mixed veggies followed by the sliced onion. Give them a good mix and let them cook for about 2 minutes or so before adding the softened unsalted butter, stir them well until the butter has melted, then add the all-purpose flour, and mix well. After a minute, add the broth, then stir them together until well combined before adding back the cooked chicken skin side up. Let it simmer for about 15 minutes or more until the internal temperature of the chicken reaches 165 degrees. While waiting for the chicken to cook, prepare the mashed potatoes. In a large mixing bowl, whisk together the heavy cream and butter, then add the boiled potatoes, season with some salt, black pepper, and garlic powder, and start mashing and mixing them until well combined. Serve the chicken together with the mashed potatoes and smother with the delicious gravy. Enjoy!
