Ingredients:

  • 1 lb of sausage
  • 1 onion (sliced)
  • 2 carrots (cut into round thin slices)
  • 4 potatoes (cut into cubes)
  • 2 bell peppers (cut into thin strips)
  • 0.5 lb of cherry tomatoes (cut into halves)
  • 1.5 cups of canned beans in tomato sauce
  • 0.5 cup of beef broth
  • salt, black pepper, and paprika to taste
  • parsley (finely chopped)

Instructions:

Step 1:

Cut the smoked sausage into slices. Place in a non-stick pan over heat and fry for 5 minutes. Once done, transfer to a plate and set aside.

Step 2:

In the same pan, add the sliced onions and saute for a minute or until slightly translucent.

Step 3:

Add the carrots to the onions and fry for 2 minutes. Next, add the potato cubes and cook for another 2 minutes. After that, add the sliced bell peppers and cook until soft.

Step 4:

Season the vegetables with salt, black pepper, and paprika. Adjust the amount based on your preference. Mix until well combined with the vegetables.

Step 5:

Add 1.5 cups of canned beans and mix everything. Fry for about 2 to 3 minutes.

Step 6:

Add the sliced cherry tomatoes, smoked sausages, and 1/2 cup of beef broth. Cover it with a lid and let it simmer for about 20 to 30 minutes.

Step 7:

Turn off the heat and garnish with chopped parsley. Serve and enjoy with your family while warm!
