Soups are a great dinner meal to keep warm and cozy during the winter season. This winter vegetable soup by OnePotChefShow on YouTube shows how easy to throw everything into a slow cooker or crockpot for this recipe. I’m always trying to find new soup recipes because soups can all be similar, however, I want a hearty soup that has amazing nutrients. Once I came across this winter vegetable soup, I was thrilled that there were protein, carbs, and vegetables in it. So, this is a vegetarian-friendly meal, but you can add shredded chicken if you prefer. The vegetables and grains are tender once it cooks for hours throughout the day, and the potatoes can help thicken the broth if it breaks into pieces since it’s a starch.

Ingredients:

  • 2 Large Potatoes (Washed, Peeled, Diced)
  • 1 Large Carrot (Washed, Peeled, Diced)
  • 1 Large Brown Onion (Peeled and Chopped)
  • 2 cloves of Garlic (Crushed)
  • Salt and Pepper (to season)
  • 8 Cups of Liquid Chicken Stock
  • 2 Cups of Mixed Soup Grains (Barley, Split Peas, Lentils – or your own choices)
  • Shredded Cooked Chicken Breast / Diced Bacon (optional)

Directions:

First, prepare all of the vegetables. Then, add the potatoes, carrots, onions, garlic, and mixed soup grains.

Next, add the chicken stock and stir all of the ingredients in the crockpot together. Place the lid on top and cook on low for 5-6 or on high for 2-3 hours.

Overall, this is a wholesome soup recipe that is an excellent winter warmer. I’ve never had a winter vegetable soup before, but I will add it to my list of soup and crockpot recipes. I love using my crockpot in the wintertime because it’s a great way to keep the food warm for a long period of time. Also, the aroma that the crockpot gives off when the food slows cooks throughout the day is amazing.
