Ingredients:

  • 2 large potatoes (washed, peeled, diced)
  • 1 large carrot (washed, peeled, diced)
  • 1 large brown onion (peeled and chopped)
  • 2 cloves of garlic, minced
  • salt and ground black pepper
  • 8 cups of liquid chicken stock
  • 2 cups of mixed soup grains (barley, split peas, or lentils)
  • shredded cooked chicken breast (optional)

Directions:

Step 1

To start, prep and chop your vegetables and set them aside. Now, add the chopped potatoes to the slow cooker followed by the chopped carrots, chopped brown onion, minced garlic cloves, mixed soup grains (of your choice), and shredded cooked chicken breast, then pour 8 cups of liquid chicken stock. Stir everything together.

Step 2

Once done, put on the lid of the slow cooker, set it on low, and cook for five to six hours (or high for two to three hours.) Serve and enjoy!
